Baby red potato salad
Ingredients
- 4-5 medium red potatoes (~1lb)
- 1/2 large red onion, finely diced
- 3 hard boiled eggs, diced
- 1 stalk celery, finely diced
- 1 lb cooked bacon bits
- 8 tbsp mayonnaise
- 1 tbsp white vinegar
- 1 tbsp brown mustard
- 1 tbsp olive oil
- 1 clamshell of fresh dill
- fresh ground salt and pepper
- garlic powder
Instructions
- Dice the potatoes into bite-sized pieces.
- Bring a pot of salted water to a boil. Add potatoes and cook until soft, approx 10 minutes. Drain, and flush with cold water multiple times. Set aside to start cooling.
- Saute the celery and onions until soft, set aside to cool.
- To make the dressing, combine the mayo, vinegar, mustard, oil, garlic powder, salt and pepper in a bowl and whisk until smooth.
- Fold in sauteed vegetables, dill, eggs, and bacon and re-season as necessary.
- Mix the potatoes into the dressing mixture and set in the refrigerator.
