Baby red potato salad

Ingredients

  • 4-5 medium red potatoes (~1lb)
  • 1/2 large red onion, finely diced
  • 3 hard boiled eggs, diced
  • 1 stalk celery, finely diced
  • 1 lb cooked bacon bits
  • 8 tbsp mayonnaise
  • 1 tbsp white vinegar
  • 1 tbsp brown mustard
  • 1 tbsp olive oil
  • 1 clamshell of fresh dill
  • fresh ground salt and pepper
  • garlic powder

Instructions

  1. Dice the potatoes into bite-sized pieces.
  2. Bring a pot of salted water to a boil. Add potatoes and cook until soft, approx 10 minutes. Drain, and flush with cold water multiple times. Set aside to start cooling.
  3. Saute the celery and onions until soft, set aside to cool.
  4. To make the dressing, combine the mayo, vinegar, mustard, oil, garlic powder, salt and pepper in a bowl and whisk until smooth.
  5. Fold in sauteed vegetables, dill, eggs, and bacon and re-season as necessary.
  6. Mix the potatoes into the dressing mixture and set in the refrigerator.
