Berry Banana Bread

Ingredients

  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 cup butter
  • 1 cup ripe bananas, mashed
  • 3/4 cup sugar
  • 2 eggs
  • 1 cup blueberries

Instructions

  1. Sift together flour, baking powder, salt, and soda. Cream butter. Put in sugar gradually, beating until light and fluffy. Add eggs and continue beating until well blended.
  2. Add flour mixture, Alternately with bananas, mixing after each addition only enough to moisten dry ingredients. Fold blueberries into batter. Turn into greased loaf pan.
  3. Bake at 350 degrees for 1 1/4 hours. Cool before slicing.
  4. If canned or frozen blueberries are used, drained thoroughly.

Notes

If making muffins, use cupcake liners and bake for 1/2 the time - yields 12 muffins.
