Black Bean Salad
Ingredients
Dressing
- 3 tbsp olive oil
- 3 to 4 tbsp vinegar (apple cider, red wine)
- 1 to 2 tbsp lime juice
- salt, pepper, onion powder, garlic powder, paprika, cumin, chili powder, cayenne powder to taste Contents
- 2 cans of black beans
- 1 can corn
- 3/4 to 1 cup diced bell pepper (red or orange looks best)
- 1/4 cup diced white onion or 1 bunch green onions
- 3 cups roughly chopped cilantro
- 1 small tomato, diced (optional)
Instructions
- Mix together dressing to taste. Add more vinegar + oil to get enough to coat all of your ingredients.
- Add all other ingredients and toss the salad to coat everything well. If your container is big enough, cover and shake to get a good coating.
- Chill for at least 2 hours for the flavors to meld. Taste, reseason, and toss before serving.
