Ingredients

Dressing

  • 3 tbsp olive oil
  • 3 to 4 tbsp vinegar (apple cider, red wine)
  • 1 to 2 tbsp lime juice
  • salt, pepper, onion powder, garlic powder, paprika, cumin, chili powder, cayenne powder to taste Contents
  • 2 cans of black beans
  • 1 can corn
  • 3/4 to 1 cup diced bell pepper (red or orange looks best)
  • 1/4 cup diced white onion or 1 bunch green onions
  • 3 cups roughly chopped cilantro
  • 1 small tomato, diced (optional)

Instructions

  1. Mix together dressing to taste. Add more vinegar + oil to get enough to coat all of your ingredients.
  2. Add all other ingredients and toss the salad to coat everything well. If your container is big enough, cover and shake to get a good coating.
  3. Chill for at least 2 hours for the flavors to meld. Taste, reseason, and toss before serving.
