Ingredients

  • 1/2 cup coconut oil (not melted)
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 375 degrees.
  2. Add coconut oil and both sugars to a stand mixer with the paddle attachment.
  3. Add in vanilla and egg. Mix until combined. Make sure to scrap the sides of the bowl throughout.
  4. Meanwhile add flour, baking soda and salt to a medium bowl. Whisk to combine.
  5. Slowly add in the dry ingredients to the wet in two parts.
  6. Fold in chocolate chips.
  7. Portion out 12 cookies and chill for 30 minutes.
  8. Place in the oven and bake for 10-12 minutes.
  9. Allow cookies to cool for a couple of minutes before transferring them to a wire rack to cool completely.
  10. Store in an airtight container.
