Pico de gallo

Pico de gallo next to some chips and halved limes

Ingredients

  • 2-3 Cups Ripe Cherry Tomatoes
  • 1 Small Red Onion
  • 5 Jalapeño or Serrano Peppers
  • 1 Lime (juice)
  • 1⁄2 Cup Coriander/Cilantro
  • 1⁄2 tsp Flaky Sea Salt

Instructions

  1. Remove the seeds and pith from the chilli peppers. Separate the leaves and stalks of the coriander/cilantro.
  2. By hand, chop all the ingredients very finely.
  3. Mix together in a bowl along with the salt and lime juice.

Notes

The cherry tomatoes might have some tough skins, and will produce a lot of juice. You can keep or pour off the excess juice, depending on how you want your salsa to be.
