The Very Best Granola

Ingredients

  • 2.5 cups old-fashioned rolled oats
  • 1 cup mixed nuts, seeds, and coconut flakes
  • 1 teaspoon fine-grain sea salt
  • ½ teaspoon ground cinnamon
  • 1/4 cup melted coconut oil
  • 1/4-1/3 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract

Instructions

  1. Preheat oven to 300 degrees, and line a large lipped baking sheet with parchment paper.
  2. Combine all ingredients in a bowl and stir together. In a separate bowl, use the microwave to gently melt the coconut oil, and once cooled stir in the rest of the wet ingredients.
  3. Toss together until all of the oats are coated well.
  4. Spread onto the baking sheet, and put into the oven.
  5. Bake for 30-45 minutes, stirring every 15 minutes until nice and toasty.
  6. Remove from oven and let cool completely before storing in airtight containers.
